cooking red beans and rice

    At home cook
    i soaked my beans over night and I am now ready to cook. my only problem is the recipe calls for 2 quarts of water & im not sure if thats too much now that the beans are semi hydrated. should I amend the recipe and cut the amount of water?

    Not knowing the specifics of your recipe it's hard to say. You've trusted it this far, it won't hurt to follow through with it.

    You still have to cook the beans, about 90-120 minutes. You can adjust water levels at the end if you've got too much liquid left.

    Usually recipes specify whether the beans should be dry, soaked, or fully cooked. 

    FWIW I pressure cook beans. 30mn is usually enough for dry (not soaked) beans.

    Draining beans should suffice then follow recipe instructions.
