cooking instructions

    I recently was given a 2lb bag of wheat berries and oat berries. Do I cook them similar to rice or what is the best way?

    I have to admit...I had no idea what wheat berries were until I googled them.  /img/vbsmilies/smilies/blushing.gif

    According to this article, you should soak wheat berries overnight.  Outside of that and cooking them for longer, the cooking methods appear to be pretty similar to rice.

    I used to cook the wheat berries in simmering salted water until tender, then drain.
    Meanwhile in a seperate pan would cook mirepoix in butter until tender, add fresh herbs, s&p, then mix with the wheat.
    Served it with duck, chicken, squab.
    Not an item you see at every restaurant so it was usually met with pleasant surprise.
