Cooking competition question - of three dishes - which is best??

Help.....? I'm hosting a cooking competition where the chef's will cook the dish at home and bring it to the competition via chaffing dishes. Out of these three recipes - which would be most conducive to sitting in a chaffing dish in transit for 1 hour. Tha "fancier the dish" the better so if the Black Cod can work for the 1 hour - great! :) Thanks SSOO much!!

I think the one that would hold up the best is probably the meatloaf.  I think the pork dish would probably suffer a bit by using pasta, it could go that really tough consistency unless someone else can suggest a solution for it.

Re the cod, the link didn't work.  Keeping fish cooked for that long is usually not really succesful as it will get tough and, well, not very nice over the course of an hour.

Wishing you luck with it all.  If you can I'd change the recipes for food that will keep better.  Obviously nothing deep fried or anything that is crumbed or battered.  It will be very sad looking after holding it for an hour.  Maybe curries, chicken dishes in a sauce - that sort of thing.

Is meat loaf fancy???   Why not a veal loaf stuffed with herbed spinach  stuffing??
