convection or combi for catering kitchen

we are oprning a big center kitchen for 16000 meals daily basis
the most food will be braised,grilled.steewd or roast
I gonna buy 4 20 gn ovens
should I have all of them combi?

Hi,
I think it would be best all in combi and same series this way parts interchangeable and also you will get a good deal in terms of service and the general servicing chemicals like convo therm mixture is compatible across the board
