    I am a chef/owner of a restaurant in St. Louis, MO, and I am interested in sending one of my talented cooks to a pastry seminar. She is very talented and classically trained, and I think she shows great promise in the field of pastries. Any recommendations on a program? I could spare her for up to one week, and would rather it be close enough that she can drive or take the train, so Missouri, Illinois, Indiana, Tennesee, etc. Oh, and I guess I should specify that I am more interested in training her on cakes, candies and confections rather than breads.
