Concentrated Flavorings.

    I was given a huge box of flavorings from a friend. (yea me)  I have no idea how long she has had them and was wondering what is the average shelf life for flavorings? (taking into consideration these were kept in temps of 64 or less)

    Also is there a test for potency?

    Are these like extracts ? Or LORAN oils?

    Loran also makes bakery emulsions which have less potency than the oils; an oil has a very long shelf life (smell it and see whether you can smell anything or not) as long as they are kept cool.  Compounds or emulsions can be refrigerated if you wanted to; when I've bought the eggnog compound from Amoretti, they say it has a one year shelf life at cool rm temp but if you were to refrigerate it, it would last longer.  The condition of the bottle will tell you a lot, too (drips? can you read the label or is it worn? does it look like it was never opened?)

    Thank you for the advice. 90% were not opened and the ones that were had little to no smell so I tossed them.
