Commercial Convection oven

    Looking to purchase a new electric convection oven for a small commercial kitchen- Anyone familiar with the brand American Range?  I have always used vulcan or blodgett but price is a huge concern for the owner-  Also looking at a Bakers pride oven and Imperial

    Yeah, American Range is nothing special.  A decent workhorse, but nothing special.  What you have to do is down load the specsheets from each mnfctr and compare the features and warranties.  With convections, it's usually the doors that go first.  Who has the best warranty and for how long?  Also, stay away from electronic controls, all you want is a thermostat and hi/low fan speed.

    If you can get a reversible direction fan, so much the better.  Remember there is no "perfect oven", and with plain-jane convections you will have a "Cold zone" on the right upper and lower corners--this is because the fan only blows one way.
