I'm not sure I understand why you want to change the color, etc.  There's broccoflower, which is a lime-like color.  You could  roast it, make mock cauliflower mashed potatoes, or a cauliflower penne dish with bread crumbs or a white sauce.

This is cauliflower boiled in beet root broth. For the green you can use parsley broth.

For the green tint you need vegetables with high content of chlorophyll. The darker the veggie the better. May be you can try with spinach. A lot of spinach in a blender with some water is a classic method to obtain chlorophyll in cooking for the purpose of tinting. There's also commercial Liquid Chlorophill you can buy.

Well. I tried with blended spinach and it doesn't work at all. Not enough green.

Im still trying to wrap my head around why color cauliflower. It isnt going to alter the taste enough....

If its just going to garnish dishes , whats the point....

i like to think " that if it doesnt elevate flavor , taste , or benefit the dish , then dont use it ".

Why not just garnish with something that is actually green or red , or etc....

If you want it to be a diferent color then why not just use food coloring <_<.

    I Just Like Food
ya'know to be quite honest, I've never really cared if a plate is garnished or not.

Can I eat it?  Does it compliment the plate as a whole? I mean all the foods on the plate?

I just like to eat, simple fresh, local, seasonal foods that are prepared well, that smell delicious and is attractive, that's enough for this simple Home Cook.

I applaud the kitchen when we've gone out to eat and they have composed an eye appealing presentation, but as someone once told me,

I can appreciate it, but I don't necessarily desire it.

    Same k-girl

I am not going to order a dish because the garnish is fun and colofurl , or because it is different i will order it if upon reading the dishes description on the menu , it appealed to me mentally , making me think it could be enjoyable and wonderful to eat.

Like k-girl said , i can appreciate it , but i dont necessarily desire it.

    At home cook
I have a friend who is a hella good cook/foodie. He maintains that the dish must be artistically displayed and all that.

I maintain that it must taste great from good ingredients and be very tasty.

He thinks presentation is BEYOND Important,  I maintain that the food must be the best we can do but that I prefer to serve family style because to me food goes with quality of family and friends and I don't care to be -- I can't even think of the right word-- restauranteur, chef, pompous ass....

Eat at my house and I will feed you the best I can but I won't try to impress you except with the quality of our friendship.

You can buy purple, blue, green types  also buy  blue, and purple potatoes,. People will think you are using food colors plus manyu are allergic to some of the components of food color.
