Cleveland combi vs Old Hickory Roti

    We are starting a food truck build and plan to do whole fresh chicken and porchetta. The initial plan was to go rotisseri but the more I reflect on my options, I very much like the idea of a combi cook with a char broil finish, similar to Nandos. I believe the efficiency and consistancy would both be more manageable.

    Any thoughts
