    Hello Chefs,

    I just signed up and thought I'd post a quick "Howdy".

    I have been in the industry my entire life, my first job (age 12) was a dish jockey in small hippy café. It was a terrible job with a horrible boss but those line cooks with their sharp knives and tattoos were just so damn cool! I jumped around prepping and line cooking (always looking for the next best thing) until at 17 I had the opportunity to intern in Italy. I spent the better part of a year over in Assisi cooking with some really great Chefs. When I returned to the US I put myself through school (non related degree) working in kitchens. When I graduated and couldn't find work in my field....back to the kitchen I went!  

    At 28, I managed to buy a small (40 seats) dinner house in the Pacific NW where I am now the Chef/owner. I'm 34 years old and I play with my food.

    Ciao, Sophos. Am I correct that you name means "wise one"? Given the context, maybe "sage" would be better. /img/vbsmilies/smilies/lol.gif  We're glad you found us and hope you enjoy being part of the community.

    As I've been around here more years than I care to admit, your story sounds a bit familiar. We have several venerable members who aimed in one direction, but no matter how hard they tried, they always found themselves back in kitchens. Eventually, they realized it's where they belonged, and it seems you reached the same conclusion. A few people I know of here spent time in kitchens in Italy, our founder Nicko among them. Jim, one of our admins and a culinary instructor, takes his students to Italy to experience the country for short stints as high schoolers. The experience has been life-changing. I've just eaten there and wandered through the markets and found it magical. I can only imagine what it would be like to cook there for any period of time. (I'm a home cook with a relative in the business.)

    At the risk of sounding conceited, yes Sophos means "wise one". The nickname was bestowed upon me by my freshmen college philosophy professor. Kudos to you for getting it.
