Chunky Chicken Salad

On days when you want a light supper, this works as a complete meal. It has meat, vegetable, and fruits—all in one dish. Leftover roasted chicken or fried chicken can be shredded or cubed for this refreshing chicken salad recipe.

Serves  6 to 8  Prep Time  18 minutes

1/2 kilo chicken breast, cooked and cubed 
1 piece red apple, cubed
1 piece green apple, cubed
1 stalk celery, diced
1/4 cup toasted walnut
1/4 kilo whole seedless grapes
1 cup mayonnaise
1/2 cup all-purpose cream
2 teaspoons all-in-one seasoning granules
salt, sugar, and pepper to taste
grated cheddar cheese as garnish

Combine chicken, apples, celery, walnuts, and grapes in a bowl.
2  Prepare the dressing: In a bowl, combine mayonnaise and all-purpose cream. Season with all-in-one seasoning granules, salt, sugar, and pepper. 
Toss prepared salad ingredients together with the salad dressing. Chill in the refrigerator until ready to serve. Garnish with grated cheese if desired.

Create a hearty chicken salad sandwich by using this recipe as filling to crusty bread or loaf bread. Try substituting the fruits in this recipe with fruits in season like mango, papaya, and pineapple.

Nice recipe, thank you for posting.  My family has made something along these lines for 2 days past forever.  The grapes really add to it. But no walnuts, no cheese, no sugar.  Sometimes we add some tinned baby carrots diced up.

I gotta ask - what are seasoning granules (different country,different palates, different language /img/vbsmilies/smilies/crazy.gif)?
