Christmas Dinner

    What's everyone up to for Christmas dinner?  I think I'm making a roast pork shoulder again with mustard gravy.  Either potato puree or mashed sweet potatoes.  I haven't decided on any other sides yet or dessert.

    I have a Prime tenderloin that's aging. I'll grind the chain for burgers and frys Christmas eve and roast the loin on Christmas day. Potato will be roasted fingerlings with rosemary from our herb garden and coarse sea salt. Not sure about veg yet. Either creamed spinach or grilled asparagus. Wine-Duckhorn Three Palms, Dessert dark chocolate truffles.

    By request, we're having

    Roast goose with all the trimmings: kilted chipolata sausages, red wine and redcurrant gravy, bread sauce (only my husband likes and eats it) roasted potatoes, french turnips and parsnips, honey glazed chantenay carrots, brussel sprouts with pancetta, bread sauce, redcurrant jelly.

    home made Christmas pudding served with hard sauce or cream

    Tipsy Laird (for those who don't like pud)

    Those that have room can eat cheese and crackers or mincepies and Christmas cake!

    I think there would be a riot in our house if we didn't go the traditional lunch route on Christmas Day.

    Im only cooking for 7 people this year, so Im going to go all out on christmas eve and do a plated meal.  Here is my menu

    1.  Squash Blossom, Shrimp Mousse, Tempura

    2.  Foie Gras, Brioche, Mango

    3.  Caramelized carrot soup

    4.  Mussels, tarragon, paparadelle, cream

    5.  Duck Confit, Sous Vide duck breast, crispy duck skin, endive, citrus

    6.  Pork belly, Brussels Sprouts, Fava Beans, Bacon Jus

    7.  Sous Vide short rib, cippolini onions, pommes puree, braised kale

    8.  Cheese

    9.  Dessert (having someone else do this course for me!)

    Going to be a busy night!

    Can't believe we aRe this close to christmas already. For my feeling, we are still somewhere in August or so.

    Christmas menu:

    Orange-Mustard Glazed Ham

    Roast Turkey (done in kettle braai)

    Cranberry - Port Sauce

    Mustard Sauce

    Pickled Onions

    Potato Croquettes

    Vegetables and Salad (to be decided tomorrow on what looks good in town)

    Irish Coffee or Dom Pedro or Ice Cream

    I'm still undecided about the starters: possibly chicken liver pate or mini vol au vents or fish cocktail.

    Other than that I'm making a whole lot of ham-turkey pies for people that want something smaller but still Christmassy

    And we'll run the normal kitchen as the people coming in from the local village prefer their whole bream and chips for Christmas and actually at all times of the year

    I'm not cooking! Aleluyah! My brud will make his speciality "vacío al asador" something like this (not my pick), and my sister in law will make lots of salads, etc.

    Roast cornish hen on wild rice, 7 layer salad, mashed, gravy. Keeping it simple, just cooking for myself this year.

    Christmas Eve will be Seven Fishs(not sure which ones yet as I amy not making it) 

    and Day I will be making Ravioli as well as Lasagna for DH and his childhood friend and wife

    It's Christmas Day and I'm enjoying a quiet cup of coffee while I wait for everyone to wake.  Merry Christmas to all!

    Due to the unforseen event of our oven breaking down I had to rethink our holiday menu, especially our intended roast pork, some of the appetizers and dessert.

    Christmas Dinner

    App - melba rounds topped with camembert & fig jam

    App - Mushroom crostini

    Smoked prime rib roast

    Potato puree a la Robouchon

    Brussel sprouts with bacon and pine nuts

    Fennel, apple and pomegranate salad

    Dessert - Rice pudding with spiced cranberry compote

    It's become something of a tradition for me and a friend of mine to go out to a Persian restaurant that serves a traditional turkey/veg/dressing buffet along side a Persian buffet on holidays. I always go Persian--love those grilled meats! It started off a few years ago just the two of us but the last couple of years others have joined us. This year there were 7 of us and, as a totally unexpected surprise, one friend treated us all.

    It was an eating fest for us in Northern Arizona with Dear Friends.  It was a full three days, I’m stuffed!!







     

     

    prior to leaving, we took my Mother out to eat and to a show for our own private Christmas celebration.

    Sounds like my favorite kind of plan. At least the one I use the most.

    Actually I am just now starting to formulate a semblance of an idea centering around an Ethiopian wat of some sort and injera bread; other than that I got nothing. Oh yeah, I did however pull some duck confit stock out of the freezer, so progress is being made.

    We decided to go with the popular prime rib roast for Christmas this year. My buddy is going to handle the roast and au jus. His sister in law is doing the mashed potatoes and a bunch of other sides. I am actually a little at a loss as to what to do this year since everyone else has things covered. So I decided I'd do a pasta salad with good quality cheeses, salumi, etc. as something people can eat as an appetizer. Then I'll do some roasted brussel sprouts with bacon and parmesan.
