    Buy Ruhlman's book and make your own! /img/vbsmilies/smilies/biggrin.gif   But seriously.. I have his book and funny enough just 15 minutes ago I was searching craigslist for refrigerators so that I can make a curing chamber. I also would like to try dry aging beef.

    The sausages are pretty ubiquitous. I've found the bacon and preserved duck at SouthEast Market before.  The store on 9000 South has pretty good refrigerator case of specialty goods too in this vein.

    On the corner of 900 S and State Street, there's a new Vietnamese centric grocer. They're calling themselves Oceans, so I'm not sure if this is the same crew who used to run the 9000 South store before their name change a year or so back.

    Teamfat i too am  a fan of asian cuisine. 

    One day maybe years from now i will definetly go to bankok <_< and who knows maybe stage for a few months. 

    Asian cuisine to me is like entering a whole new world, so many things you wont find in a regular store and so many techniques and preparations and different uses for everything.

    I know technically Indian cuisine is Asian, but that is what drew me into their food. It's so different from French, English, American. I have since seen where African and derivatives like Haitian, Jamaican, etc. are more similar to Indian than they are different. Cool stuff.

    There are a fair number of Sudanese refugees in the Salt Lake area.  Just tonight we went to a choir concert where one of the featured groups was from South Sudan.  Great music!  But the Sudanese also have a food booth at Living Traditions Festival, and it is probably the only one where I purchase food from every year.  I've been trying to match the seasonings of their spinach and cous cous dish.  Getting close, but there i just one or two spices I'm missing.

    @phatch - I've seen the new market, have yet to stop and shop.

    I remember when i was a teen i lived off instant ramen. 

    Then oneday when i was 17, i went off to Sao Paulo, and visited a Japanese Colony in the middle of the city. 

    I had authetic Ramen for the first time..... in a bowl 2x bigger then my head. 

    I thought i was gonna have a food orgasm <_<

    But the entire asian culture everything from history, to religion, to food, to language excites me. 

    But the food is definetly one of the better experiences xD.

    Also don't forget to ask the guy behind the meat counter.  

    Quite often a lot of places don't bother putting the stuff out in display cases, especially the smaller ones.

    A lot of Asians generally don't like food sealed in plastic so they leave it hanging behind the counter.  (this allows the customer to do a sniff test and really get a good look at it)
