Chile Rellenos fusion

Thought up the idea but can't come to a full conclusion...

What could you stuff chile Rellenos with besides cheese? I was thinking a mediterranean/middle eastern fusion. Seafood? Vegetarian?

...Could be drizzled with a cumin yogurt sauce to finish?

I've just been stuck on the thought and can't get it out of my head

The sky's the limit with this.  Chefross had a few good ideas.  Here are a few more:

pulled pork-sauce (flavored) any numerous ways

Shrimp and Grilled corn

Shredded Chicken (again flavored any number of ways)

Ropa Vieja (a Cuban shredded beef)

Grilled Veggies

I once did "tamales" with roasted poblano peppers as the wrapper-skipped the egg batter and steamed instead of fried them, but still relleno-like.

I also have to admit that I am not a big fan the really eggy batter these are usually dipped in before frying so I have tried lots of different breading options.  One of my favorite is to fry tortillas, crush them and use them as the last step in a standard breading process.

Any form of ground meat.

Heck, you can fill them with macaroni and cheese. Wouldn't call it rellenos anymore, but who cares /img/vbsmilies/smilies/wink.gif

Try using ingredients from the sea, like shrimp, marlin, octopus, clams, seaweed, will be delicious, even making a fusion with eel sauce, it will make a totally different recipe
