Best curry chicken/chicken curry recipe you've got--plus any pointers if you have any. Thoughts?
Depends. Thai, Vietnamese, Singaporean, Bangladeshi?
Doesn't matter. I'm just looking to try a variety! Which ones do you like the best?
I like heat so... vindaloo and phal are my favorites. Sometimes I'm in the mood for something mellow or cooking for other people and will do jalfrezi, or something similarly mild. I like south-east Asian "curries" too, but find Chinese, Japanese and Korean curries in the "Vermont House" style more unintentionally humorous than interesting.
Which ones do you like best?
