Awesome new series on netflix called Chefs Table. Theres one episode featuring Mangus Nilsson. DurIng the episode the chef ask the cook why he vac'd meat. That he told him not to do that. My question is why? Many, many Chefs vac their proteins. Mangus says no. Any thoughts on thIs?

I watched each episode back to back and I have to say the one on Ben Shewry of Attica was the one I most related to. What spoke to me was how he recognized that time with family was so important.

How do YOU guys feel about this new series? I've watched most of them and the only one I really enjoyed so far was the Dan Barber one. I feel as where most chef documentaries -like jiro, and three stars- are driven towards chefs, this series is more geared to just everybody. For instance the francescana obstetria one really delved into his love life. Also I had bought faviken a few years ago when it came out, I was so excited to see Magnus Nilsson. And then it was totally just whatever. What were your 'professional' opinions?

This series is about the chefs. I think that the menu items they showed were nice, but the series really didn't do much in terms of teaching any cooking secrets.

I did appreciate the diaspora of personalities that were explored, though. The entire spectrum, from down-to-earth, to egomaniac, was explored. That's where I found the entertainment.

I think that this series was more about providing a way for everyone to look into the lives of the Chefs, as opposed to providing cooks and aspiring chefs with insight into the business.

There were two threads started on this so I am combining them.

Why is the prep cook doing anything if not shown the way Chef wants it?

@RedBeerd Cantu  This was not intended to show cooking secrets this was a very thoughtful documentary on how these chefs came from nothing and rose to the top in their field. It really took a deep look inside what being a chef is all about.
