Chefs cook test

    Hello:

    I have the privilege of my second interview with a cooks test.  I am applying for the Chef's position.  I am an excellent cook with excellent knife skills but this is my first cook test.  I worked in a private setting so this is new to me.  Just want to be sure that I go in there fully prepared.  The place is just average, but the expectations are high.  I read in another post that when we take these tests that we should not go over-board and that is a great point.  I also read that they will be watching for knife skills, waste and organization which I thought was excellent information.  Anything else that I can expect that they will be watching for.  My skills are great and I certainly understand not wasting product, I guess I wonder what are some good items to make that are pleasers, dishes that every kitchen has the ingredients.  Just looking for suggestions and any other help that you can provide.  Thanks

    Cook something that you enjoy eating. As long as it tastes good, it's a good balance of flavors and textures, and you can do it within their time constraints, you shouldn't have a problem

    We mostly watch if you can work efficiently while working quickly and what you make is good and not thrown together

    Make sure what you cook is in keeping with the restaurants "theme".
    I can't stand it when a "chef" interviews for a position but has no idea what type of restaurant we are.
