Chef Romuald Royer Corsica

I watched a documentary on an up and comming Corsican chef last night, absolutely amasing the combinations he was comming up with.

In Corsica they are like spoiled kids for ingredients, they have amazing cured meats, beef, veal, mutton and fish.

The animals feed on a profusion of wild herbs and bushes which translates into beautifully flavored meat.

They also have a rich tradition of working with chesnut flour (the original polenta commes from Corsica I believe).

Anyway, I was drooling all over the couch... a real mess so thought I'd "share the love" his site is want to go there for my next holiday.
