Chef admits to intentionally serving gluten to celiacs

I hate when chefs start thinking too highly of themselves.  If you don't want to cook for an allergy, or food intolerance, then be man enough to say it and tell your guest to go someplace else.  Not that I'm suggesting that, but its better than lying to them, and avoids possible lawsuits!  This is what happens when chefs start to take themselves too seriously.  Grow up, get a life and remember that you work in the service industry.  If you think you are above that then get out of the business, you have no right being in it.
