Cheeses for a soup

    I'm making a soup similar to broccoli cheese soup but the recipe I found on the internet that in altering calls for processed cheese. I myself am not a big fan of American cheese and am seeking out a variety of maybe three cheeses that can replace this ingredient in this soup and still taste good. If you can help me out that would be great. Thanks!

    I would go with Cheddar cheese,hot or mild-your choice, Gouda or Mozzarella. Best choice would be a combination of hot Cheddar and Gouda.

    Jack/cheddar/gruyer for me.Mozzerella will string and pull  to much  like rubber bands

    You are right Ed. Forget about  the Mozzarella and replace it with Jack cheese

    You'll probably need to add some extra liquid and starch to to the soup if you're skipping the processed cheese.

    Liquid because the processed cheese is runnier in the soup and the normal cheeses will be thicker.

    But also starch, like flour, to help hold the cheese in suspension in the soup. The cheese will tend to clump and form strings otherwise.

    I use the combination of cheddar-colby-jack for mac n' cheese and I supposed that would work well here too.  Grated parmesan for garnish.

    I love soup with cheddar but with mushrooms and spices, not broccoli

    monterey jack for a mild cheese,

    smoked cheddar (great paired with chipotles),

    white cheddar (great paired with roasted poblanos),

    brie( great paired with anything

    Ok the recipe calls for a pound of the processed stuff. will the measurements change if I use cheddar jack?

    At first I would go with a little less cheese than the recipe calls for and then let my tastebuds guide me.

    Fontina and Havarti have good qualities for creamy soup.
