How do I avoid this?
Also, whats the best way to cut cheesecake?
IIRC you are either over cooking it or cooking it at too high a heat. the top is drying out and thus cracking. Try a lower temp and keep a better eye on it. probably got more advice coming up. hang in there.
Could also be that you are over working the eggs and/or cooling it too quickly.
As far as cutting go: dip your knife in hot water and wipe any pieces of cheesecake off between cuts.
