Cheese...slices,crumbled,annoying

    How is cheese stored on your line? in 6th pans ect? If I do not want to use 6th pans because of the variety of cheese and the amount of pans it takes up on the line.

    Lowboy cooler - wrapped in saran on a tray with other 'dry' cold items.

    I could put all the sliced cheese on a half sheet pan. Wow I never thought of something so simple! Thanks!

    One place I worked that had about 10 different sliced cheeses, we just used a 1/3 pan on the line and stuffed them all in there. Then I had another 1/3 just for Boursin in my lowboy. :/
