Charging an established Caterer

    My neighbor has a catering business. He asked me to do my Potato Salad for a wedding he is doing for 200 peeps. I'm not sure what to charge because I have never done it for a large group like this. I don't know what product cost will be or how much time it will take me. I want to give him a price before hand so there are no questions after the fact. I was thinking of just charging him a flat fee of $1.00 per person ($200). I know he needs to make money off this also so I'm not sure if that is too much or not. Any suggestions?

    I would toss the ball back in his court and ask how many lbs he needs...200 servings can mean different amts in different situations (plated or buffet)

    Then figure out how much your usual recipe weighs and how much it costs you, including time (and then grab a calculator ).

    Don't be timid.

    IMO a friend would not ask this of another friend and then leave them hanging without a formula to figure things out.

    Fastest way to ruin a relationship is to muddy the water with a $$$ issue.
