Hi folks, I have an unusual request for my business and don't know how to set labor cost. I normally cook meals for people in their homes (personal chef business model), but I have been asked to cook for 9 women attending a 3-1/2 day retreat at a remote beach house on the Gulf of Mexico. It would include 3 dinners and 3 lunches. Dinners include dessert. This is 2 hours from my home town, so I will be staying in the area, along with my associate chef. All meals will be gluten and dairy free. My normal rate is $325 to prepare 20 servings of food in one day (about an 8 hour day, not including planning). Any thoughts on what I should propose for labor costs? I can figure the food and other costs out. Thanks for your help.
