Challah braids blending

    Hello. 

    I have been baking challah successfully for may years, however, lately the braids are all blending together during baking. It goes into the oven looking perfect and comes out looking like an unsliced rye bread. I use the Zehav cookbook recipe and follow it verbatim, and have had the same problem with different recipes. It always tastes fantastic, but doesn't look great. Please help. I feel like I have tried everything.

    How old is your yeast? Are you using a new yeast you have never used before?

    Do you use an oven thermometer? You might have oven that is underheating with age so the dough over-rises with the oven spring before setting.  Just a wild guess.

    I am with you @phatch  on that as I think something is causing over-rising.

    I tried new, recently purchased yeast. My oven is 17 years old. I'm thinking maybe I need to have it checked. Thank you all for your input. I will let you know.
