Central Asian freindly Cheap Buffet Ideas

Here's the skinny:

10 days, 3 meals a day buffet style, no live stations,  60pax of central Asian (Indian, Arabic, Filipino, Nepal, Tajikistan, Kyrgyzstan)  young adults/teens (16-20yr olds)

Piece of cake I thought...

Until:

10 dollars per pax per day food cost budget...

So, with this in mind I'm thinking:

Lunch and Dinner:

Soups

Samosa/sambuseks/samsi

Salad bar and heavy salads potato, coleslaw, pasta etc

heavy starch dishes, fried rice, biryani, kebsa, potato daphonoise, croquettes, lasagne, pastas etc (maybe pizza?)

No pork, no beef, stick to mutton (cheap here) and chicken, stews, fricassee, cacciatore's   maybe one day of the local trout...

Breakfast?

cereal, starch, eggs, and cold cuts?

Any additional suggestions?

.vegetarian okonimiyaki. You can bake them in the oven. Last time I made me them, I baked them at 400 for about 7 minutes. Used a 4 oz ladle. Instead of fish sauce, I used ume sure vinegar.

Baked beans is a popular breakfast food with that demographic.

Season without meat to bring a hot vegetarian dish to the meal.

With that tight of a budget you must make every morsel count.

IDK about your choice of "heavy" salad bar items.

Would be nice if you could survey them beforehand.
