Catering advise for Day centre

    Hi

    I need to cook a roast for 30 people but only two people in the kitchen, I cook the meat the day before but what is the best way to warm carved pork and beef up for serving and for how long.

    On a tray covered with foil with a bit of water or Iceburg lettuce base...meat on top or other

    Don't think there will be any problems with the labor part as you will find as you get further in school roasting a hunk of meat (30 portions is not all that large) can be done by one person (unless of course the weight prohibits a safe transfer in and out of the oven).
