Carcass Soup Started

    I made turkey stock 2 days ago, didn't have time for soup until today though. Simmering now with onion, celery, carrot. I will add rice in a bit then add some green beans and sweet corn from my garden. Add chopped leftover meat at the end. I will freeze a couple pints of this for quick meals.

    Turkey seems to get eaten for 5-6 days after thanksgiving in one form or another!

    That is one thing about traveling for holidays - hard to bring back leftovers on the plane. And the host for this year's dinner is not that much of a cook. The stuff she chucked into the garbage could have been used for several good meals.  Sigh.

    Yes Ed, I too use that. Poultry seasoning helps the soup as well.

    For a hardy dense soup, the turkey dressing goes in.

    I grabbed some basil and thyme off my herb pots in the bay window. Plus the stock had a lot of spice flavor from the poultry seasoning and sage used in the stuffing and on the turkey

    I may have to get a bone in turkey breast along with some necks and wings mostly for the purpose of making turkey noodle soup. With home made noodles, apropos the flour challenge.
