Edit: The title should say can you FREEZE! Sorry it was a LONG work day. I'm assuming you probably could. Although they would probably taste better if you didn't. The chicken I used was Perdue Perfect portions and it was new. The expiration/freeze date for the chicken isn't for another week. The Enchiliads are made with corn tortillas, red onion, garlic, canned chipotle and green chili's, stewed tomatoes, and sauteed then shredded chicken breast. They are topped with a very small amount of cheese and enchilada sauce, no sour cream or anything of that sort. Will these freeze safely? Has anyone ever frozen anything like this before? It is too much for me to eat, I was supposed to have someone over to have some but she can't make it. Now I'm left with tons of left overs that I hate to see go to waste. Thank you!
