Can frozen fish be thawed and used for sushi?

If so, an kinda which work well? And any to avoid?

It generally must have been frozen in a particular way. Flash freezing is best for quality but then the fish is frozen at -4 degrees Fahrenheit for a minimum of seven days, or for 15 hours at a temperature of -31 degrees F. This is to kill parasites and is the FDA standard.

Unless you're buying from a case for sushi grade freeze treated fish, you'll want to do the freeze cycle yourself if you can. Otherwise you just don't know how it's been treated.
