Buttercream Frosting needed, PLEASE

    Hello!!! I am practicing my skills for my son's 1st Birthday Party. I have the cake down, now I need an awesome buttercream frosting to top it with. I need it sweet, but not too sweet. Easy to make, easy to spread and decorate with should I choose to. I haven't made a final decision on what I am going to do with the docorating yet. But if it helps, my son's theme is Mickey Mouse Club House. So the icing may eventually turn out green, or I may leave it the natural color and get one of the edible toppers to go on it.

    This buttercream frosting is amazing.

    1/4 c. unsalted butter
    1 egg yolk
    4 cups confectioners' sugar
    2 tablespoons vanilla extract
    2 tablespoons heavy cream
    1 8 ounce package cream cheese, softened

    In a large bowl, whip the butter for about 10 minutes until it is super fluffy, beat in egg yolk. Gradually blend in the confectioners' sugar, alternating with 2 tablespoons vanilla and 2 tablespoons cream. Beat in the softened cream cheese.

    You may have already finihsed your cake by now but I have an alternative recipe for you.

    2 tbls butter
    2 tbls sugar
    2 tbls boiling water

    Add all to a bowl and beat until thick and creamy. If it looks as though it might be curdling just keep beating and it will become creamy again. You can double the quantities if needed.

    This is a very simple recipe my mother used as I do. It is very buttery and can be used between the layers of a cake or sponge or on the top.

    Oh yes, sorry I forgot. Add a few drops of vanilla extract to the butter as well.
