Butter Rocher

Hi Chefs

Just ate at a really nice restaurant. The bread came with beautiful rocher of whipped butter. I would like to replicate, just wondering if I can whip and Rocher the butter before service? Are they kept in the fridge or left at room temperature?

We whipped ours and then froze them. Pulled what we needed before service to soften. I'm sure you could keep them in the fridge but if you want something spreadable you are going to have to use them right away or let them temper.

We would do similar with a whipped butter filling. Shape and freeze during a lull. It saves a lot of time to be able to just grab them to thaw when needed.

Not long at all, esp in a warm working kitchen. For about a tablespoon's volume, 5-10 min to not frozen, 15-20 min to soft.
