Butter a tenderizer?

    Was told by a friend last night that butter is also a tenderizer, never ever heard that one. Any truth there?

    With respect to pie crusts, I think so, as compared to, say, lard. Lard provides flakiness, butter provides tenderness.

    Could it be that butter has tenderizing properties that some other dairy has like buttermilk or yogurt?  But then again I thought it was the acid in these that tenderizes.
