Buffalo Chicken Meatballs

    I made this one Super Bowl. 

    Ground Chicken

    Blue cheese crumbles

    Hot pepper sauce

    Chili powder

    Garlic powder

    Panko crumbs

    1 egg, beaten

    Butter

    Salt & Pepper

    Parsley

    Preheat oven to 350.  Mix chicken, salt, pepper, garlic, and chili powder, egg, and parsley in bowl...add panko until firm. Roll into mini meatballs and push a crumble into each one.  Line a baking sheet with parchment paper and arrange.  Cook until slightly brown-20-25 minutes depending on the size.  Meanwhile, heat pepper sauce and butter in sauce pan until thick.  Once meatballs are done, toss them into the pepper sauce to coak, but don't overcook.

    Arrange them on a nice plate then sprinkle with more parsley.
