Bread Crumbs Persil

1 quart panko bread crumbs
1/2 cup clarified butter or olive oil
2 cups parsley -- minced
2 tablespoons minced garlic -- optional
salt/pepper -- to taste

Toss panko with all ingredient. Season.
Use as a crumb coating, a gratine' crust, or by a slight modification of sieved hard-boiled egg, lemon, and browned butter it becomes sauce Polonaise(which is outstanding on broccoli, asparagus and cauliflower!)
