Costco had a California based vendor in demoing Bolani yesterday They were impressively delicious. I've googled a few recipes and directions but would love to know of your first hand experience in making these, if any. It reminds me of a pupusa in construction, but uses what I think is a lavash dough instead. Fillings were pumpkin, potato, lentil and spinach with some good toppings of cilantro pesto, a garlic cheese and a jalapeno jam. (image from www.chefkoch.de) The color varies some depending on the filling.
