Blanching Bones

We blanch a fair bit of chicken bones in a big pot, strain, wash the bones & pot, then put it back to make a very white broth. I was wondering if steaming them in a combi oven achieve the same results?

No. When blanching in water, some of the blood and impurities leach out into the water and get discarded. With steaming, the blood and impurities will just get cooked in.
