Blais Roast Beef Sandwich

I am not a trained food critic or an expert.  Can I get some input on what makes a great Hot Roast Beef Sandwich and is it acceptable for the thin sliced meat to be fully brown?

Today I went to the Spence in Downtown Atlanta for lunch and had this.  My wife had the pork tacos.

IMO they were both over done.  Frankly, I was shocked.  My expectation was a more on the pink and bloody side.  The flavor was excellent but the meat had the texture and feel of...well an Arby's Roast Beef Sandwich.

The wait person stated that the way it was served was normal including the.... well... well done beef.

One can see in the middle...all brown.

IMO it is the tenderness that counts the most.  It'd be interesting to hear from Richard himself why he would serve beef at this temperature but he probably does have a good reason.  Be open to it and if it wasn't difficult to chew on and it tasted good then that's what should matter.  And keep in mind that there are other cultures that would never serve meat unless it was well done.  It's a matter of preference but also a matter of appreciation.

There are several styles of roast beef for roast beef sandwiches.  Some, as for Italian beef, or debris, are more braised than roasted and are usually served quite well done.  Any chance yours was something like that?

I have no idea.  What I will say is that the sandwich presentation was excellent but to me the beef tasted pretty good with the sauce but the texture was like Arbys...very thin sliced kinda crumbly.

This is not something I would recommend or have again.
