Black Forest Cake

    I have been asked to make a black forest cake for my niece , it must be delivered by saturday 2:00. I was just looking for a different assembly of the cake. I really don't want to put shaved chocolate all around the sides. Does anyone have a unique idea for the assembly of the cake. There 4 layers of cake made. I can use 3 or 4.

    Nothing else is made yet. Just looking for a new idea.

    Any thoughts would be appreciated.

    The corner-stones of Black Forest cake are chocolate and cherries.

    Try different variations on those flavours...

    - light cherry frosting on the sides with a bit of dark chocolate as accents

    - light chocolate frosting with cherry halves as accents

    - dark chocolate frosting with cherry bits and white chocolate accents

    As long as you stick with the flavour profile you'll be fine no matter what you decorate the cake with.

    Not knowing the age of your niece; you might do a "Black Forest Bubble-Gum Cake"

    Pink (cherry frosting) with bits of cherry, white and dark chocolate all around the sides.

    The skies the limit - just stick to complimentary or similar flavours.

    I do about 1 a week, I'm not stingy with Kirsch, and this what the "regs" appreciate.

    What I do is wrap the cake in couverture.  I keep a marble slab in the freezer, fill a piping bag. with melted untempered couverture, pipe out a line on the slab, spread it out with a palette knife, immediately pick it up and wrap it around the cake.  I like my band to peek about 1/2" above the cake, fill this cavity with chocolate shavings, and the standard whipped cream rosettes.  The chocolate band will not have a shiny surface, but it will be brittle like tempered couverture, and have a matte appearance.  It does look classy

    Great feedback, thank you so much.

    My niece (true foodie) is in her mid twenties , her in-laws are rolling into town to celebrate their  anniversary, #20.  She asked me if I could make something.

    Right away I thought of chocolate and cherry. I really like your idea of switching up the flavors and color , thanks Mike, thats exactly what I am going to do to .

    As far as the exterior, Foodpump, I will attempt to do that, my fear is of it cracking. I will spread it on acetate,  wrap around cake, I am going to spray the cakes with Kirsch  ......gosh I wish I had your talent.

    I really need to work on my chocolate techniques.

    Just an update.

    I made the cake for her. I thought I would show you some pics. There was 3 oz of Kirsch in this cake and it was 4 layers & very high. When I measured it, it was almost 7' high with the chocolate.

     This was what the inside layers looked like.

     Ready for whipped cream around sides.

     Then applied chocolate pieces & added ribbon.

     My niece sent me their  surprise reaction to their cake.

    So I just wanted to say  "Thank You",  Mike and Foodpump for helping me.

    Petals, that is beautiful!  I love, love, love dark chocolate and cherries!

    Your Niece and her family are very lucky!

    Now I'm wondering, how did they ATTACK that cake?

    Really happy it turned out so well.  

    I'm totally stealing the ring of chocolate slices around the sides, makes for great slicing guides i'd bet also.

    Great work, you have a lucky niece!

    My niece was so excited... I tried to cut the chocolate slices just a bit over an inch. There were about 20 slices.

    It was all worth it. Here is my niece ( I am the lucky one) modeling for a bridal magazine. La prunelle de mes yeux. She is quite the Foodie  I might add.....lol
