Biga vs. Sourdough starter

    How do I substitute my natural starter for Biga, or yeast in artisan bread recipes?  Do you use an overnight retard in the fridge? Thanks!  By the way, I love the pizza on the griddle pan as you describe in your newest book! Thanks!
