Best way to cook eggs for production breakfast sandwiches

    Just Graduated From Culinary School
    Pastry chef here, but I now need to make breakfast sandwiches for the morning rush.  What the best/fastest way to cook multiple eggs for breakfast sandwiches?  It's a bakery, so no flat top, only 4 burner stove & deck ovens.  Help!

    Muffin tins coated with pan release spray. Crack an egg into each cup, season with s/p, cover with foil and place in oven 450 for 15-20.
    Or..... Scramble the eggs and proceed as above.

    What shape is required. If the bread is a croissant or loaf-type, round egg may not be ideal. On an English Muffin or between crumpets...

    A griddle and some egg rings can produce round eggs in no time at all. In a bakery, don't you have lots of little tart rings or tart pans that could be used?

    A thin layer in a sheet pan, in the oven, baked until rubbery.  Cut, fold in three McDonald's style.

    I did these for a busy employee cafe. We offered biscuit and croissant breakfast sandwiches. I made plain omelets cut in quarters with a slice of cheese and sausage patty, ham or bacon. They hold up well in a warmer when we remade them for self service. We also help them flat on a plate in the warmer covered.

    My facility used a silicone mat. "Silpat" from Demarle.

    It was one of the muffin shaped ones.

    A little pan spray, couple of cracked eggs in it, seasoning, then pan on top for cover.

    Put in a deck oven and within 10 to 15 minutes you had 24 nicely cooked eggs.
