Best thermometer recommendations?

    I am looking for a high quality instant read thermometer that can be used for candy making, for egg pasteurization, baking, and maybe even for roasting and such. Hopefully it is water proof and doesn't break easily.
    Does this knowledgeable crowd have any favs?

    Edited to add - they also make probes to use with various readers for leave in situations, we like those as well - I use the DOTs for quite a few applications.
