Best tasting marrow?

    Hello, it's been a while since I've eaten marrow but I can remember just how delicious it is. So which marrow is the best tasting in your opinion? Beef, lamb, veal, etc. And are there any sort of tips you have while choosing your bones and for cooking them? And just one last question, is marrow considered offal?
