So, I feel food and wine go great together. however, for me, wine is not the perfect paring for many foods. beer has so many more variations in flavor, aroma, and texture. Thus I'm looking for some ideas on paring with a nice IPA and summer time dish. Any ideas?

Do you have a specific IPA in mind and what is the flavor profile?

I enjoy grilled chicken with a fairly hoppy beer, along the lines of a Sierra Nevada.  I'd choose a local brew, Epic's Spiral Jetty, though.

A more cold weather dish is beef short ribs braised in stout.

Chicken dishes with a bottle of beer would be great on any given day. Wine can be a good starter but not always good with food items.

In Italy, when we have pizza, a pint of beer to go with it is almost compulsory.

I don't know whether it is because it pairs well or because pizza places are usually informal and we prefer to leave wine for more formal occasions, but that's what we do!

Pizza places Are informal, you Betcha. Wine is much better with pizza .wine with spaghetti sauce or tomato sauces are generally better than with beer . Beer is refreshing and wonderful with many foods even foods that are fine with wine  .

I like your question. But I am not a gourmet. I like beer when I don't want wine. And IPA beer has a very strong and robust taste, in my experience. It is a meal in itself. I'll have a beer with a potato dish or a hamburger dish or something that'll hold up to the beer . Fish and chips and beer. Chinese food is very good with beer but a lighter beer. Indians spicy dishes are excellent with a cold beer, but so is white wine or red . Also try a whiskey sour the next time you go to the Chinese restaurant( goes with everything). IPA beer wouldn't go very well with A Chinese fortune cookie. An IPA needs something to contrast and complement or stand up to it. Like a tablespoon of cement.

I like a plain old IPA with nothing,...... but another one .

All I know about beer paring is Duchesse de Bourgogne (ale) pairs well with almost every burger I've ever had in my life.
