Beef Wellington advice needed please!

    All,

    I would be very thankful for any advice on the following question regarding the selection of beef for some beef wellington.

    I am cooking for 6 people and want my beef wellington to make a real splash, I have a recipe but I would be very grateful for some experience on what particular breed of beef I should be selecting.  I have been advised that Herefordshire beef fillet and Aberdeen Angus beef fillet are the ones to go for.

    I would be thankful for the forums thoughts please.

    Can;t help you with the two you mentioned.  I use Australian grass fed tenderloin.  Not as big as a US finished beef, but better flavor IMO.  Ramsay has a great video on youtube.
