My crock pot is currently being used for chicken stock and will be out of comission for the next 36hrs. I have a bunch of leftover beef bones from making ground out of chuck. I'd like to try beef stock in the oven. Anyone do this with good results? My idea is to simmer it on the stove until before i go to bed, then put it in the oven overnight at 200 and keep it there until the 24hr mark. I do have a small double oven, so i hope it wont be a colossal waste of energy by using tje smaller portion. I'm also a little paranoid about leaving gas on overnight.
