The specialty of his establishments is naturally raised beef cuts, filet mignon, prime rib, porterhouse, kobe, sirloin, entrecot etcetra. Rubaiyat, an unusual name for a Steak House stems from the owners love of the hedonistic Persian writer, his stanzas called Rubaiyat 700 years later.
