I was wondering if anyone could provide advise on what Atlas 150 attachment might be best suited for making Udon and/or Lo Mein noodles?
I was thinking the Bigoli for Lo Mein, and Linguini for Udon?
I ran a batch of Udon dough through the fettuccine attachment as an experiment but it expanded far too much and was undercooked inside, but rubbery outside because it was too big.
