apprentice problem

    Hi new here sorry if this is the wrong area for this post.

    So we have had this apprentice for 6 months now. The problem is that he doesn't want to learn, is a smart arse to myself and the other chefs has no respect for any of us and thinks he is the boss.How do we deal with this told the manager multiple times about the problems but doesn't want to fire him. we would prefer to have the dishy/ kitchenhand as an apprentice at least he acknowledges us when we ask him to do something.

    If he is doing or not doing things that are to the detriment of the establishment, tell him that you going to ask for a three way sit down with whoever is responsible for hiring and firing in order to get it sorted out. Make sure he understands that it is strictly business and not personal, merely a matter of insuring that the establishment doesn't suffer as a result of the present situation.

    I'm really surprised an attitude that bad has been allowed to last for six months. No respect, won't listen and thinks he's the boss? Virtually every kitchen I've worked in would have shut him down a long time ago. Get the chefs together, take him in the cooler or the loading dock or the dining room before service and let him know in no uncertain terms how you all feel. In blunt language.

    If you can't fire him, due to the bosses, then just shut him down at every turn.  Don't tolerate his crap!  Give him the worst jobs in the kitchen.  If he's on line during service give him the least desirable position.  He will either catch on and straighten up or he'll quit.

    I know how frustrating it can be.  I worked with an apprentice in my last place.  He wasn't like that all the time but he was with me.  I haven't been doing it that long and he thought he knew better where as he didn't  have  a clue

    I would pull him aside when its not busy and just ask him whats going, if you have even a little bit of a relationship with him. There could be any number of reason why he is doing what he is doing. Maybe take him out with a couple of the more experienced cooks for some beers and try and straighten him out. This could all very well just be a waste of time, but having a good talk without him getting defensive could do alot of good.

    If it doesnt work, cut the kids hours, bring in someone with a better attitude and a desire to learn, and spend more time nurturing the new kid than the useless one. If he does end up giving you a lame excuse or wont even talk about it, then at least you have another reason to present for termination.

    I think the OP can't actually cut his hours I think it is out of his control.
