What's with this Aogami blue super steel? from what I read its the dream steel. Or aogami blue steel #1. What would be the difference? I am looking for a knife that sharpens to a razor with out to much work. and keeps the edge, edge retention.

And for steel properties in se: zknives.com
But again, all will depend on the Heat Treatment.

HT will determine hardness, strength, toughness, ductility, grain size, carbide size and distribution...
These properties have practical consequences for e.g. ease of sharpening, potential refinement, brittleness, edge retention, bite.

HT differences can be dramatic.  S110V is a powdered metalurgy supersteel that far exceeds blue super as a trade off between sharpness and edge retention, though it is much more expensive and you will not find in in kitchen knives at this time.  I saw a comparison of different knife makers using it, and the difference in edge retention for some was better than 50%.
